We attended a Wazwan last month in Srinagar's old town — a 36-course wedding feast that began at noon and dissolved toward midnight. No one rushes. The waza (the master chef) moves from kitchen to courtyard with the unhurried authority of someone who has made rogan josh the same way for forty years, and learned it the same way from his father. This is not decadence. This is the opposite.
What is a Wazwan?
A Wazwan is a traditional Kashmiri feast of 36 distinct dishes, typically served at weddings and celebrations. Each dish is meticulously prepared, and the meal follows a specific sequence determined not by appetite but by preparation time.
How long does a Wazwan take?
A full Wazwan typically spans 8–12 hours, from noon until evening or night. The pace is deliberate, with guests eating from communal platters with their hands.
Can I arrange a Wazwan for my journey?
